Cookie Roundup


Hi, I am participating in the qdpatooties Annual Cookie Roundup. Although this is not a "Christmas Cookie" it is one of our family favorites & it is so good at this time of year. Hope you try them & Enjoy!

Amy's Punkin Pie Bars

1-1/3 cups flour
1/2 cup firmly packed brown sugar
3/4 cup granulated sugar. divided
3/4 cupp(1-1/2 sticks) cold butter or margerine
1 cup old fashioned or quick oats, uncooked
1/2 cup chopped walnuts
1 pkg (8 oz) Cream Cheese, softened
3 eggs
1 can (15 oz) pumpkinn
1 Tbsp pumpkin pie spice

Preheat oven to 350 degrees F. Line 13x9 inch baking pan with foil (Mold foil over bottom of pan laving 3 inches extending over the short sides. Pop pre-formed molded foil into pan & cruch exteded sides to form handles> Use handles to lift baked bars out of pan)
Grease foil lining.

Mix flour, brown sugar & 1/4 cup of sugar in medium bowl; cut in butter with pastry blender or fork until mixture resembles course crumbs. Stir in oats & walnuts. Reserve 1 cup of the mixture. Press remaining mixture onto the bottom of the pan. Bake 15 minutes.
Beat cream cheese, remaining 1/2 cup of sugar, eggs, pumpkin & pumpkin pie spice in a small bowlw electric mixer on medium speed until well blended. Pour over crust, sprinkle with reserved crumb mixture.

Bake 25 minutes. Lift from pan using foil handles & cool completely. Cut into 24 bars
